Food Invokes Sharing Says Jason Bursey of Parallel

Jason Bursey wants you to take your time. He wants you to come and enjoy the flavor of fresh, locally sourced food and he wants your friends to enjoy it too.  Behind the kitchen door, Jason strives to prepare a meal so perfect, it becomes the centerpiece of your conversation.

“We never rush anyone – you can sit down for hours if you like — drink some wine, savor your meal, and catch up all you want with friends.  If the conversation is meaningful, then the meal will be memorable.”

Since I’m a wino, I was thrilled to have the opportunity to try out Parallel Wine Bistro in Ashburn.  I was greeted by Jason Bursey, a friendly, loquacious chef who opened Parallel almost five years ago. I was immediately struck by how passionate and caring Jason was and he clearly conveyed his vision and love for crafting locally sourced food and uniquely pairing it with the most delectable of wines.

The menu is simple, yet diverse – you are able to choose to eat light, nibble on delectable charcuterie, or indulge on larger dishes perfect for sharing. Indecisive as I normally am, I decided to let Jason pick out a few of his favorite dishes. We started with the parallel chips —  made fresh on site. Though simple, they had an amazing texture and the smoked Gouda cheese really stood out.

“We offer an experience of wine and cuisine to promote a true expression of camaraderie amongst the patrons who visit our tables, said Bursey.  “All you have to do is slow down and enjoy it on it’s terms!”

Among other dishes was his Tomato/Kalamata Olive Bruschetta, andProsciutto Flatbread.

For me, the show stopper was the Andouille Shrimp & Grits. At $16.00, I promise you will not be disappointed. This dish is fresh, and delivers a decadent richness with the combination of the cheese grits, the shrimp , the added kick of the Andouille – topped with a fried egg. Go there. Try this. You will be swept off your feet and land firmly in the Louisiana bayou.

Parallel proudly supports Farm to Fork Loudoun which brings together many of the area’s fine chefs with the local family-owned farmers and wineries.

All these dishes are listed on the menu with suggested wine pairings, or you can partake in the Wine Stations – where you have the option to enjoy wine by the glass (or even half glass), some of which sell for $100+ per bottle. It is rare to be able to sample higher end wine by the glass before you commit to the entire bottle –  a unique feature indeed. If you are into wine, and looking for a variety – some of which are less prominent in this area – this is your place. The ambience is fantastic and they have acoustic music throughout the week in the evenings!

I happen to visit during a wine theology session where young adults get to fellowship and know each other over a glass (or two) of wine. 

Every month, Parallel hosts a wine dinner as well as several events with live music.  When the weather is nice, patrons can sit outside, sip on some wine, nibble on cheese and enjoy the company of friends.

“Food should invoke conversation with friends,” Bursey said. “When you’re sharing and socializing, that’s when I know I’ve done my job.”

Go there — you will fall in love.  Speaking about love, Valentine’s is this Saturday — this would be a perfect venue for a romantic meal.

After I retired from the Navy, I attended George Washington University to earn my MBA. I left with a diploma, and with a food tech startup called RUNINOut. Our goal was to add as many restaurants, stores and attractions to the directory and after running it for five years, I felt I had oversaturated the local Washington, DC market. It was time to take RUNINOut on the road. In order for my startup to grow, I had to add more restaurants – that meant getting outside the Beltway and exploring the highways and byways in small town suburbia. I bought a truck and drove cross-country for two years. Here's my adventures in the Washington, DC area and beyond.
